In 2010, Seyit Karagözoğlu planted a vineyard in the Çal district of the Denizli province. He
planted it with only indigenous grapes including Çalkarası – a variety that is exquisite for
producing high quality rosé wines. The bright, fresh fruit is balanced by the acidity, along with
a deep rosé color. After over two weeks of slow, cool fermentation, the Çalkarası is kept “surlie” for 3 months with bi-weekly “batonnage” (stirring).
The mermaid label was inspired by the varietals itself. Çalkarasi is a red grape but Paşaeli
makes a rosé from this varietal. As the rosé is neither red nor white – just as a mermaid is
neither human nor fish.
Çalkarası is grown exclusivelly in Çal District of Denizli. As a variety it is very suitable for producing high quality rose wines due to its strong flavours present in the fruit also balanced with good acidity. Our Çalkarası is coming from a single vineyard at an altitude of 850 meters. So days are warm but nights are cool which help to preserve acidity. Kept with the skins for 18 hous to extract colour and flavours it has a dark rose colour. It was fermented at 18C for 15 days. It was kept “sur lie” for 3 months with 2 “batonnage” a week to increase complexity of the wine. It is a 100% Çalkarası. On the nose it has red fruits as well as the palate, especially strawberry and rasberry balanced with good acidity and a long finish.
