Paşaeli Yapıncak

The more serious of the two whites, Yapıncak is a variety grown exclusively on the European side of Turkey called Thrace near coastal villages. The fruit for this wine comes from a single vineyard in Şarköy that is about 150 meters above sea level and is facing south towards Sea of Marmara. There is always a cooling breeze coming from the sea. The vineyard has a gentle incline which is great for drainage. The vines are about 35 years old and are free standing vines with low yields and high quality.

The grapes are pressed with whole clusters and 90% fermented in stainless steel tanks with the other 10% in neutral French oak barrels. Aged for 3 months sur lie before bottling. Very pale gold. Highly distinctive aroma, both rich and tangy. Intense lemon, hint of clementine plus a more oily minerality and quince. Lovely citrus on the palate too – bright and crisp and full in the mouth with decent acidity and minerality. 12% ABV.

VINEYARDS

Yapıncak variety is grown exclusively in the Thracian 50 years old vineyards located on the coastal villages of Şarköy, Mürefte and Hoşköy. Grapes comes from a single vineyard in Şarköy which is 150 meters above sea level, facing south towards Sea of Marmara. There is always a cooling breeze coming from the sea. The vineyard has a gentle incline which is great for drainage. The vines are about 35 years old and are free standing vines.

WINEMAKING

Fermented in stainless steel tank at 18ºC. 15% of the wine is barrel aged in new French oak barrels, and the rest is kept in stainless steel tank for 3 months on its fine lees and stirred once a week (sur lie) to add complexity to the wine.


​TASTING NOTES
Very pale golden colour, with a highly distinctive rich aroma – intense lemons and clementines, then plenty of mouthfeel and quince flavours, with a crisp, dry finish.

METHOD
Yapincak is indigenous to Tekirdag in north-western Turkey, sharing its name with the nickname for freckled young girls due to the little red sport that adorn the grapes. Pasaeli’s Yapincak is from a single 30-year-old vineyard overlooking the sea of Marmara, grown 100 metres above sea level on clay soils with very high mineral content. Typically used for blending due to its relatively low acidity, Pasaeli have been able to exploit these fresher maritime conditions and bottle Turkey’s first varietal Yapincak white wine.
Vinification is 85% stainless steel and 15% new or second use French 225-litre oak barrels. The wine is aged on the lees in tank and barrel for 3 months, with twice-weekly stirrings. After 4 months ageing the wine is bottled.

Yapıncak variety is native to Şarköy – Tekirdağ on the European part of Turkey. Grown in a single vineyard with 50 year old vines at an altitude of 200 meters, it is fermented in stainless steel tanks at a temperature of 18C and aged on its lees “sur lie” to provide complexity and with 10% barrel aging in French oak barrels. The nose is aromatic with rich notes of lemon, quince and linden. Lovely citrus on the palate too – bright and crisp, and full in the mouth with a pleasant acidity and minerality.

Paşaeli Winery

Paşaeli Wines built a boutique winery in Kemalpaşa near the port city of Izmir in the western part of Turkey. Total production is currently around 150.000 bottles a year. They make wines as little as 500 bottles to a maximum of 15.000 bottles per sku. Also, they have four vineyards of 15 hectares, one near the city of İzmir (close to the village of Kaynaklar), two more near the city of Tekirdağ (one close to the town of Şarköy and the other close to the village of Hoşköy) and one more near the city of Çanakkale (close to the village of Gedik). Kaynaklar and Hoşköy vineyards were planted by them but Şarköy vineyard has 50 years “old vines” of Yapıncak variety and Gedik vineyard has 35 years “old vines” of Karasakız variety. They hand harvest grapes.
