Paşaeli Papaskarası 2016 Red Wine is produced from Papaskarası grape variety which is native to Thrace on the European part of Turkey. Grown in a single vineyard, it is fermented with native yeast only. Medium to light ruby red color. On the nose, its earthy and peppery character becomes lively with intense red cherry flavors. On the palate tannins and acidity are in balance with herbal notes and sweet spices, providing a long finish. Best served very slightly chilled. The grapes are handpicked, destemmed and crushed. The wine is made with native yeast only. Fermentation takes place in stainless steel tank with skin contact of 20 days with pumping overs and punch downs. 10% of the wine is barrel aged for 6 months in French oak barrels, rest is aged in stainless steel tanks.
METHOD
Papaskarası is an old grape variety native to Thrace, literally translating as “black grape of the priest”, perhaps because it was grown close to many ancient monasteries. The grapes come from a single vineyard in eastern Thrace, the vines planted on clay-loam soils. Fermentation with wild yeast in stainless steel tanks, then the wine spends seven months in French oak barrels and a minimum six months in bottle before release.
